Chicken Scaloppini

Origin of dish: Italy


Chicken supreme      6pcs

Green olives               6pcs

Black olives                6pcs

Lemon juice               20ml

Butter                         30ml

Salt                              To taste

Pepper                        To taste

Parsley                        For garnish

Satay sticks                6pcs

Olive oil                      as required



1. Marinate the chicken with salt, pepper, lemon juice and olive oil and keep aside for one hour.

2. Skewer green olives, chicken pieces and black olives and grill the chicken pieces on each side for 2 minutes.

3. Take a sauce pan.  Add butter and lemon juice and add the skewered chicken and glaze both the sides of the chicken for few seconds.

4. Remove from the pan and arrange on a serving plate. Pour the remaining butter glaze on the chicken.

5. Serve garnished with chopped parsley.
