Fresh Fruit Gazpacho Soup

 

It’s a cold soup with the flavour of fresh mint and spicy jalapeno. It’s tasty, refreshing and healthy.

INGREDIENTS

Pineapple peeled and chopped – 50 gm

Watermelon peeled and chopped – 50 gm

Papaya peeled and chopped – 50 gm

Grapes – 25 gm

Mango peeled and chopped – 50 gm

Green capsicum chopped – 10 gm

Jalapeno – 5 gm

Salt – a pinch

Black pepper crushed – a pinch

Sugar – a pinch

Lemon juice – 1 tsp

Fresh mint leaves – 10 gm

Crushed ice – 1 tbsp

Water – 100 ml

 

GARNISH

All fruits dices – 50 gm

Mint leave – 1

 

METHOD

  1. Put all the chopped fruit, capsicum, jalapeno, salt, sugar, crushed pepper, lemon juice and mint in a blender. Add some water and a tablespoon of crushed ice and puree for a minute. Remove the puree and strain.
  2. Place the strained puree into a glass cup or bowl or cocktail glass. Add the diced fruits and garnish with a fresh mint leave.
  3. Serve chilled
