Garlic Prawn with Roasted New Potatoes and Herb Tossed Vegetable Batonettes

Garlic prawn is one of my favourite food. With roasted new potatoes and herb tossed vegetables it can be a complete meal and healthy as well. Let's try this simple recipe.


Prawns with shell (16/18) - use 8 piece. Use the size of 16 to 18 number per kg.

Lemon juice - 1 tsp

Salt to taste

Black pepper powder - a pinch

Butter as required for cooking

Chopped garlic - 1 tbsp


Baby potatoes - 6 to 8 each

Olive oil or other cooking oil - 1 tbsp

Garlic chopped - 1 tbsp

Salt and pepper as per taste


Use carrot, zuchinni, baby corn and coloured Bell pepper. Cut them into finger size also called batons or batonette. You may also use other vegetables like broccoli, cauliflower etc.

Butter - 1 tsp

Salt and pepper

Fresh herbs like thyme, rosemary, parsley and oregano - Finely chop a tbsp of herbs and keep aside


A lemon wedge and fresh parsley chopped


First wash the prawns with cold water and remove the shells of the prawn. Keep the shell of prawn intact. Remove the blue and black veins and rinse under cold water. Dry the prawns with clean paper napkin. Marinate the prawns with with chopped garlic, lemon juice, salt and pepper.

Let's roast the potatoes because it will take more time. So wash the potatoes, dry them with a clean cloth. Make the marination in a bowl by whisking oil, chopped garlic, salt and pepper. Keep in a roasting tray and cover with a silver foil and put in the oven at 200 °C for 30 to 40 minutes. Till the time potatoes are getting cooked you can blanch the vegetables for a minute. Blanching means cooking partially in salted boiling water from 20 seconds to a minute depending on the vegetable.

Now cook the prawns. Heat butter in a pan. Add chopped garlic. Lighly brown the garlic and add the prawns. Check the seasoning and add more salt if required. Saute for 3 to 4 minutes. Once cooked arrange them on a plate.

Check the potatoes for doneness by inserting the tip of a knife. Once cooked remove them from the oven and place them with the prawns on a plate.

Now for cooking the partially done vegetables, heat some butter in a clean pan. Add the vegetables, salt, pepper and fresh chopped herbs. Toss for few seconds and arrange them on the same plate. Garnish with lemon wedge and chopped parsley. Enjoy the prawns.

Cooking tip - You may add a tbsp of white wine to the garlic prawn while cooking to enhance the flavour.
