Healthy Spinach Almond and Cherry Tomato Salad

INGREDIENTS

Baby spinach leaves - a small bunch

Cherry tomato - 10 - 12 each cut into halves

Almond flakes - 2 tbsp

Parmesan cheese shaved - 1 tbsp

olive oil or salad oil - 1 tsp

Lemon juice - 1 tsp

Salt to taste 

Black pepper crushed - to taste

Dried oregano - 1/2 tsp

METHOD

Remove the stem from the spinach and wash in cold water. Drain the water the excess water. Take a clean bowl and put the spinach leaves add cherry tomato halves. Add olive oil, lemon juice, salt and crushed black peppercorn. Gently mix the salad. Keep the salad on a plate and top with almond flakes and parmesan cheese shavings. Drizzle some olive oil and sprinkle some dried oregano. Serve cold.
