Tomato and cheese Canape

INGREDIENTS 

White bread - 2 slices

Tomato - 1 whole

Cheese slice - 2 slices 

Parsley sprig - few

Pesto sauce - 1 tbsp

Salt to taste

Black Pepper crushed - a pinch

For Pesto sauce 

Basil leaves - a handful

Pine nuts - 1 tsp (cashew nuts can be used as alternative) 

Parmesan cheese grated - 1 tsp

Garlic peeled - 10 pearls 

Olive oil - 3 tbsp 

Salt and pepper - just a pinch of each

Lemon juice - few drops

METHOD 

1. Using a 1 inch diameter round cutter make a small round pieces of white bread. You may use them plain or toast them lightly with butter. 

2. Wash and cut the tomatoes into round slices and arrange them on the round bread pieces.  Sprinkle salt and pepper. Now cut the cheese slices into small round pieces smaller than tomato slices.  Arrange them on the tomatoes and bread slices.  

3. Now make a pesto sauce by blending all the ingredients for pesto.  Drizzle pesto sauce or just the pesto oil on the canapés.  Garnish with parsley sprig and serve cold.
