New York Cheesecake Recipe

Cream Cheese - 500gm
Sugar - 175 gm
Eggs - 5 large sized
Dairy cooking cream - 500 ml
Vanilla essence - 10 ml
Corn flour - 1 tbsp
Lemon zest - use zest of 2 lemons
Lemon juice - 1 tsp
Cookies or Biscuits crumbled - 200gm
Butter - 50 gm
First make the base by crumbling the cookies and rubbing the butter and cookies crumble till the crumble is soft and grainy. 
Use a steel ring of 6 inch diameter. Cover the lower part with silver foil to give the shape of mould. Now spread the crumble mixture at the bottom. The thickness could be approx 1 cm. Bake the crumble mixture till light golden brown in the oven at 180 degree centrigade. Remove from the oven and let it cool.
Now prepare the cheese cake mixture. For this first separate the egg yolks and egg whites. 
In a clean bowl beat the cream cheese and sugar till smooth. Add the yolks one by one and beat till the egg yolks is completely mixed. Add dairy cream and mix gently with a whisk. Add vanilla essence, corn flour, lemon zest and lemon juice and mix gently with a whisk.
Beat the egg whites separately in another clean bowl till fluffy and like a froth. Gently fold in the eggwhite to the cake mixture with a spatula. 
Pour the mixture on the base prepared in the first step into the mould. Leave an inch of space for the cake to rise while baking. In a tray pour an inch height of water and keep the mould in the water and bake in the oven on the tray at 150•C for 25 to 35 minutes till the top is light golden in colour. Remove from the oven and cool for a while at room temperature. Then put in the fridge for 3 - 4 hours.
 When serving first remove the silver foil from the bottom and place the cake on a chopping board. Then use a sharp knife and move the knife through the sides of the mould. You may use warm water to dip the knife before cutting through the sides for smooth texture. Then gently push the cake down and remove the ring by gently pulling upwards. Slice the cake and serve with choice of toppings.
