Bhuna Gosht / Bhuna Mutton


Mutton pieces - 1 kg

Mustard oil - 3 tbsp

Onion fine slices - 4 medium size

Ginger garlic paste - 2 tbsp

Green chilly chopped - 5-6 chillies

Tomatoes chopped - 2 medium size

Garam masala powder - 1 tsp 

Cumin powder - 1/2 tsp

Coriander powder - 1/2  tsp

Kashmiri chilly powder - 1 tsp

Turmeric powder -1 /2

Dried fenugreek leave or Kasuri methi - 1 tsp

Salt to taste

Water - 1 cup


Ginger julienne - little

Fresh coriander leaves chopped - little


  1. Heat a pan. Add mustard oil. Heat the oil till smoking point. You may also use refined oil. Add ginger garlic paste. Cook for a minute or two. Then add green chilly chopped and onion slices. Cook  till the onion slices turns brown by stirring frequently. Add chopped tomatoes and cook for 2 more minutes.
  2. Add the mutton pieces and cook on a slow flame for 8 to 10 minutes. Now add the powdered spices like garam masala, cumin powder, coriander powder, kashmiri chilly powder and dreid fenugreek leaves. Add salt and let the mutton cook for another few minutes or approximately 5 minutes. This dry process of cooking on a slow flame is called bhuna. 
  3. Add some water and cook covered for another few mintes tiil mutton is tender and dry. 
  4. Garnish with chopped coriander leaves and ginger julienne and serve hot.
