Aloo Hara Pyaz / Baby Potato cooked with Green Onions

INGREDIENTS

Baby potatoes - 500 gms

1/2 tsp of each red chilli powder, yellow chilli powder and turmeric powder for the marination.

Cooking Oil or Ghee- 50 ml

Cumin seeds - 1 tsp

Bay leaf - 1

Garlic chopped - 1 tbsp

Ginger chopped - 1 tsp

Onion chopped - 50 gm

Tomato chopped - 50 gm

Green chilli chopped - 1tsp

Green spring onion chopped - 50 gms

Water - 100 ml

Salt to taste

Red kashmiri chilli powder - 1 tsp

Yellow chilli powder - 1 tsp

Turmeric powder - 1/2 tsp

Cumin powder - 1 tsp

Coriander powder - 1 tsp

Fresh chopped coriander leaves - 1 small bunch

GARNISH

Spring onion chopped - 1 tbsp

METHOD

Wash and peel the baby potatoes. Marinate the potatoes with salt, red chilli powder, yellow chilli powder and turmeric powder and put in a roasting tray. Roast the potatoes at 160 degree Celcius till cooked. You May also the boil the potatoes with skin and then remove the skin and use them further.

Heat a deep pan or kadhai. Put oil or ghee and heat for a while. Add the cumin seeds and let it crackle. Add bay leaf. Add chopped garlic and ginger and cook for a minute. Add the chopped onion and cook till light brown. Add the tomatoes and green chillies and cook for 4 to 5 minutes on medium heat. Add chopped spring onions. Add salt, red chilli powder, yellow chilli powder, turmeric powder, cumin powder and coriander powder and cook for a minute. Add the roasted potatoes and cook for 2 to 3 minutes. Add chopped coriander leaves and mix well.

Garnish with chopped spring onion and serve hot.
