Fried Eggplant Bengali Style / Baingan Bhaja / Begun Bhaja


Eggplant or Aubergine - 1 large

Salt to sprinkle

Turmeric powder - 1 tsp

Red chilli powder - 1 tsp

Mustard oil for deep frying

Fried green chillies with salt sprinkled - 2


1. Cut 1/2 cm thick round slices of eggplant. Place the slices on a plate.

2. Sprinkle some salt on both sides of each slices. Gently rub turmeric powder and red chilli powder on both sides of the slices. 

3. Let the slices reamain at room temperature for 5 minutes. 

4. Heat oil and deep fry the slices. 

5. Serve hot garnished iwth some fried and salted green chillies.
