Indian Root Veg Salad

This is an incredible salad. I have used some root vegetable like cassava (simal tarul), sweet potato and yam to make this salad. 

 

INGREDIENTS

Cassava or Simal Tarul as locally known in Assam - use 1 medium sized

Sweet potato - 1 small size

Yam - 1 small size

Potato - 1 small

Beetroot - 1 small

Carrot - 1 small size

Corn kernels blanched- 2 tbsp

Ginger peeled and grated - 1/2 tsp

Fresh Coriander leaves chopped- 1 tbsp

Salt to taste

Blackpepper crushed - 1 pinch

Lemon juice - 1 tsp

METHOD

1. Wash all the vegetables with cold water. Boiled the vegetables like cassava, sweet potato, potato and yam together for 15 to 20 minutes. Once boiled remove the skin and cut into 1/2 inch dices.

2. Peel the carrot and beetroot and boil them separately. Boil the carrot for 2 to 3 minutes and boil the beetroot for a longer time till its soft. Once boiled remove the skin and cut into 1/2 inch dices.

3.   Now mix the cut vegetables with blanched corn kernels, grated ginger, fresh chopped coriander leaves, lemon juice, salt and black pepper crushed. Mix gently with a clean spoon and serve.
