Subz Mewadi / Subj Mewari / Rajasthani style Vegetable Curry

Subj Mewadi is basically a Rajasthani style of veg preparation where lots of garlic is used to cook the gravy along with whole spices. It is then spiced with yellow chilli powder and finished with lots of fresh chopped coriander and cream. For garnish fried garlic is sprinkled.

Preparation time - 30 minutes

Cooking time - 20 minutes

Serves - 4 to 6 people

INGREDIENTS

Cauliflower florets - 30gm

Green beans cut into 1/2 inch dices - 30 gm

Carrot peeled and cut into 1/2 inch cubes - 30 gm

Green peas shelled - 30 gm

Corn pearls - 30 gm

Oil or Ghee - 100 ml

Cumin seeds - 1/2 tsp

Cardamom green - 4 - 5 each

Cinnamon stick - 1/2 inch in length

Cloves - 4-5 each

Black peppercorn - 1/2 tsp

Coriander seeds - 1/2 tsp

Bay leaf - 1 leaf

Garlic chopped - 50 gm

Ginger Garlic paste - 1 tbsp

Green chilly paste - 1 tsp

Onion Chopped - 100 gm

Tomato chopped - 100 gm

Tomato puree - 100 ml

Boiled Cashew nut paste - 100 gm

Asafoedita powder (hing) - 1/2 tsp

Yellow chilly powder - 1 tsp

Red chilly powder - 1/2 tsp

Turmeric powder - 1/ 2 tsp

Fennel powder - a pinch

Water - 100 ml

Salt to taste

GARNISH

Fresh cream - 1 tbsp

Fresh coriander leaves chopped - 1 tsp

Red chilly whole lightly tossed in hot oil  - 2

Fried Garlic pearls - 4-5 

METHOD

1. First step is to blanch all the vegetables for a minute in salted water. Remove the vegetables and keep aside. 

2. Heat a kadhai or deep pan. Add ghee or cooking oil. Once the ghee or cooking oil is hot add cumin seeds and other whole spices. Let the spices crackle for 30 seconds. Then add chopped garlic and stir till garlic is lightly browned. Then add the ginger garlic paste and green chilly paste. Stir for a minute on medium heat.

3. Add the chopped onion and cook till onion starts to brown. Add the chopped tomatoes and tomato puree and cook for 5 to 6 minutes on medium heat.

4. Lower the heat and add boiled cashew nut paste and water and cook for 10 minutes. Add all the powder spices and salt. Stir and add the vegetables. Cook for 10 minutes till the vegetables are soft. Cook further if the vegetables are not cooked properly. Once done ladle out the vegetable in a bowl and garnish with a swirl of fresh cream, chopped coriander leaves, fried red chilies and fried garlic pearls.
